If you are specifically looking to rotate your pages, that particular dialogue already offers the option you need:

Simply click rotate pages on the organize tab, and then choose all portrait pages, and rotate them 90 degrees to get a uniform document.

Please do ensure that you are fully up to date, build 394 and 395 had a bug wherein this option, despite existing, did not have the intended effect. If you are running build 396, you should find that this option does exactly what you need it to do.

All of the above should work. As you have noticed, the Author field is a bit special in this regard, and the quotation marks there should encompass the full string, other fields, to my knowledge, do not have any other special requirements.
