Would it be possible to create a dynamic stamp which checks and unchecks when you click on it, or are all these dynamic properties of the stamp lost once it is placed?

The dynamic part of a dynamic stamp is that you can while placing it dynamically change some of it's parameters.
This can be via e.g. a pop-up dialogue that asks you to select some options (including check box ticks), but once selected and the stamp is placed on the page - that copy of the stamp becomes a static object.

If you need to be able to click and unclick something - please consider a checkbox form field instead.

and currently you can not add a custom icon to a checkbox form field, is that right?

That is correct - there are some limitations on what can be done with the appearance of form fields (checkboxes included).

Maybe you can just have two versions of your custom checkbox with and without the image, and use those as needed?
