I would really like to have a quick way to copy highlighted text. maybe a button in the left click menu that will copy highlighted text to the clipboard?

Have you tried the keyboard shortcut CTRL+c? Left hand on the keyboard, right hand on the mouse, that's even faster than a button...

No, to copy highlighted text you need to select this text. The reason is it is possible to have PDF where highligh comment isn't placed over text (viewer doesn't allow to do this, but there are lot of PDF creators).

If you mean selected text, there is also right-click, copy as plain text.
If you do mean highlighted text, there is double-click, drag to select and Ctrl C, or right-click copy.
