I would like to set the zoom property for all pages to 100% but there does not seems to be any way of doing this other than changing each page individually. If you go to the property of a page - say page 5, you can "add an action" of "use page 5" and this then gives you the opportunity to set "use zoom level...100%".
So this can be done on an individual page level but it would be good to have an option to set this for all pages in one go.
For the avoidance of doubt I am talking here about the zoom property on pages themselves - i.e. the zoom property which will be applied when you click on the thumbnail - not about zoom settings on bookmarks and links.

Unfortunately there is no way to automate this process, you would need to do it manually, page-by-page. I should ask why it is you want to specifically set this to 100% for every single page, as that would forcibly change the zoom level every time someone viewing that document clicks on that page.
By default clicking a thumbnail will respect the current zoom level, which I would expect any user to prefer, since a specific percentage based zoom level does not always conform to everyone's screen sizes and could be a major inconvenience to some people.
