At the moment we support the majority of JS actions detailed in the Acrobat JS API.

This is the standard reference for most PDF applications. We do have a small handful of unique tricks, but I am afraid they are currently undocumented. The Dev team does have plans to create an extended manual of our unique JS options when they have time, but currently these are unavailable.

Mathew is correct, we do not support Java to my knowledge. As you see above, we support JavaScript actions, but no, plain old "Java" is not an option at this time, and this is unlikely to ever happen.
