I guess the answer will be "not possible" but maybe you consider it implemented ...
Adding a custom bar looks like the following when the bar is horizontal:

When vertical:

Idea: I would want to be able to resize that bar when vertical to make it wider - so at least some of command's title gets displayed (I decide on the width)...
p.s.
Of course, that "how wide" to be set only when in "customize toolbars" mode.

You already have the ability to some extent. When placing those buttons, you can right-click and toggle off 「👁Show Icon」; this will display the text of the button (granted, you don't have the icon associated with it anymore).
A hack to get both the icon AND text would be to create (2) toolbars, one with the images on the left, and a toolbar immediate on the right; the same button but one is just Icon, and the other just Text. To quickly duplicate the button, just [Left-Click] + [Ctrl] & drag/drop to populate the 2nd/duplicate of the menu bar.
