Add "All Fonts" to "Sanitize Document Options" list
In my experience, fonts in a document can take up to 1GB. Please consider adding "All Embedded Fonts" to the

There is already a section of the "Save as Optimized" window specifically for fonts: Does it not do what you want to achieve?
Also - fonts can take up a lot more than 1MB in files in East Asian languages

Currently the list has changed and contains the following items (no fonts):
- Remove metadata and document info
- Remove embedded content
- Remove action and scripts
- Flatten form fields and remove comments
- Remove search index
- Remove hidden layers

- Remove bookmarks

Moreso, the Sanitize feature was never intended to handle font data. it is for removing potentially sensitive data from your documents, not optimizing/reducing the file size.
