After the "Sanitize Document Options" window appears, the cursor should be on the "OK" button
That is, for example, after dragging files onto the “Sanitize Document (Removes sensitive information, such as metadata, form data, invisible contents, etc.)” tool, just press Enter or Space for processing to proceed to the next step. This wish has already been implemented in the PDF-XChange Editor tools, so, I believe, it fits into the general concept of interface behavior.

At least in PDF-Tools 10.8.1, build 406 the problem is solved.
