Hi there,
the change log for version 2.0.0041.3 release - 03-03-2009 says "Added customizable command for switching accessibility options." but I can't figure out how to do it. I can't see it via Customize Toolbars --> Commands.
Could somebody walk me through it?

thanks for the posting. It appears you posted the same question twice, probably because you didn't see it needed approval being your first posting. I deleted the second one, hope that's OK with you.
I must confess that this is before my time with Tracker and I'm not entirely sure either. I am assuming you want to easily switch between different accessibility options, maybe with a keyboard short cut(s) switch between different settings like switching a profile?
Or is it something else you are looking to do?

No, that's exactly it. For instance, I would like to switch between the page color override with white text on black background for general reading and normal (not overridden) mode using a shortcut.

It will allow you to turn on or off, using a keyboard shortcut, what ever accessibility options you have set up so I think this is exactly what you are looking for.
Find it in Customize Toolbars --> Commands [tab] --> View [category] --> Override Document Colors [Commands]
By default it is set to Ctrl+Shift+6
