is there any way to obtain "automatically" a kind of list of all the custom keyboard shortcuts I associated to Viewer commands?

Hello Ricaz,
You can export all your Viewer settings and transfer them with you to a new machine if needed, you can see each command (and if there is a shortcut assigned to it) if you right click in the toolbar area and select "Customize", and in the Viewer Manual in section
1.9. Keyboard Shortcuts
You could see the default shortcuts associated with the most commonly used commands.
