With Firefox, when I transform an email to PDF, the text selection tool works well
With Gmail, when I turn the same document to PDF, the text selection tool does not work

Hi Gerard OSH,
Chrome prints text as curves by default, and I do not know how this can be changed in the default print window - so make sure to click the link at the bottom: "Print using system dialog... (Ctrl+Shift+P)" and then your PDF will have the text selectable and searchable.
