After selecting:
View > Page Layout > Facing
how does one swap (left-to-right & right-to-left) the two pages?
For example, I am viewing a PDF file of a large document which I have previously read and studied (and even highlighted) in hardcopy book form. Consequently, there are multiple headings as well as sections or passages which I remember as being on the left page and others which I remember as being on the right. However, when I select the two-page facing view (which of course simulates looking at the actual book), all of the pages normally on the left are now on the right and vice versa. In other words, each of the odd-numbered pages is on the left and each of the even-numbered pages is on the right and I would like to view them just the reverse of that.

Hi gopher_everett,
Open the Viewer and go to View -> Page Layout -> Show Cover Page in Facing mode. This should fix the page order for you!

Thank you Stefan. I anticipated the solution was something simple like that — I just did not know what it was.View -> Page Layout -> Show Cover Page in Facing mode
