Hello,
I'm looking for a way to show or selectively hide some custom stamps.
I have tried to group my custom stamps by category in stamps collections, and to use "ShowStampsCollection", but I don't see any effect on my document.
Can you help me, please ?

Do you want to show/hide stamps already placed on the document or to show different sets of stamps in the stamp palette?

Thanks for the clarification - I'm afraid that this isn't currently possible, but I can add a feature request for the ability to toggle such layers. While not a promise to deliver, it is a promise that its implementation will be carefully evaluated.
Also, please be aware that such a feature is likely to be a long-term project, as the vast majority of new features are being added to the Editor, rather than the Viewer (the Editor will replace the Viewer upon completion) and most of the Developer's focus, at this time, is on getting the Editor ready for final release and sale.

In expectation for a future new version, is it possible to make a loop and show/hide each stamp individually ?
Is there a property to set visibility for a annotations ? Or maybe by setting the opacity property to zero for each annotation ?

Whether or not such an implementation is possible, I'm afraid I couldn't say as I'm not a programmer, but it does seem possible to have each stamp/annotation as separate layer, which should allow for what you're asking.
As for the opacity, this can be set by right clicking the object (in case the stamp) and selecting Properties --> Appearance. You should then be able to enter in a value of zero to make the object entirely transparent. Also, to negate the fact that not being able to see the object would make it hard to find and reset the opacity, you could go to View --> Other Panes --> Comments (Ctrl + M), which would allow you to select the comments through this pane.
