I am a new user and am interested in doing construction take-offs from PDF plans.. My question is...
"How do I import the data to an Excel spreadsheet" ?? (I'm using the free version of the software)

much will depend on your original PDF and how the text is presented. There isn't a function explicitly to do this, the easiest way to copy content from a PDF to Excel is to use the Select Tool to select the items you want then paste them into Excel.
If the PDF text is a table and has columns and rows you can use the CTRL key to limit the selection to a single column and then when pasted into Excel it should put each row in it's own cell
