Please see subject. Is there any possibility within PDF XChange viewer to easily automate page numbers on a document and add recurring stamps (such as a header or footer)?

Not with the Viewer, but with it's successor the PDF-X Editor both things are possible:
https://www.pdf-xchange.com/product/pdf-xchange-editor
You can add watermarks for any image logos, and header/footer for any page numbering.
