Is there any way to EDIT (or add to) the Identity?
(I've made more than one identity in other pdf viewers, so I was wondering if I'm simply missing something here...)

You can edit the identity of the person making comments on a document from the properties of any markup. To alter the identity of the document's author, you need to create a new document, which you can do by printing to a PDF printer driver.
I think that is correct, as PDF is primarily a read only format. If permissions have been restricted, you cannot even add comments and markup.
You can, of course, log on to Windows with a different user name.
