I suggest you add the escape key (to exit full screen mode) to your list of keyboard shortcuts.

I don't understand. The escape key already does exit Fullscreen mode.

Keyboard shortcuts are customisable, though I didn't yet find a command in the customise dialogue to exit fullscreen mode, so I see no way to change the shortcut to exit fullscreen mode.

It would be nice if the Enter Fullscreen mode function was a toggle, so that pressing F12 (or whatever) would exit fullscreen mode.

The additional command named as 'FullScreenModeExit' will be added into next build. You will be able to customize shortcut for this command.
