I would like to ask why dd.MM.yyyy HH:mm:ss is no available for signature?
The option is not available. Is it possible to configure like this.

Welcome to the forum.
The Date format present there is a text entry field as well as a dropdown. If you wish to use a format that is not presented in the list, you can do so by editing the text as needed.
