Custom page ordering

Hi, I'd like to know if there's a way to sort a PDF in this order?

I want that on one side of the page, we have pages 1, 2, 3, 4... etc.
And that on the other side, we start with the next half: 5, 6, 7, 8... etc.

Currently, I can sort it in booklet form, and as simply 2 pages per sheet (1 and 2, then 3 and 4, then 5 and 6) but not in the way I'm requesting. Here's a graphic of what I'm looking for:

It's easy to do if it were just 8 pages total, but sometimes I need to sort large files with hundreds of pages, which can be very time consuming. Thank you!

That is amazing!!!! I just tested it, works perfectly, just need to press that button once, and then merge pages to 2 in page. This is exactly what I needed! Thank you so much.
