I've the latest version of the xPDF, but I want to offer a change to the programs behaviour on the 'close to tray' option.
Let me explain...Previsously..
When I’d normally close a PDF viewer the program would close out the PDF and the viewer [application closes completely].
When I’d minimize the PDF viewer the program would minimize, but retain the PDF I was looking at [multiple ones too].
The new option behaves like a 'minimize' when I choose the X [close option now]... I think this is correct, and by design.
I'm using the [close to tray] function as a 'quick start', but my problem is I keep collecting PDF tabs. I look at PDF files a lot; being able to view them quickly is very nice.
Can an option be added to xPDF ... 'on close minimize' ...and additionally 'close all PDF's' when that happens?
I may be using the program incorrectly, or missing the concept of the option that's been added.
Am I missing something?

The "Minimize to Tray" is working exactly as expected - just minimizing your Viewer without closing any documents in it and "hiding" it in the tray area near your clock. This is to save you the space on the main TaskBar area where all opened windows are usually displayed. If you want to close all opened documents but keep the Viewer running there is a command for this too: File -> Close all - it does not have a shortcut by default but you could assign it one as described here:

You can also quickly close a document by using the Ctrl + W key combination (also customizable).
