How can I delete one page in a document with PDF-XChange Viewer?

You need the registered version to delete pages. Tools, delete pages.

further to Bhikkhu's comment I should point out that while the functionality is indeed a pro feature it is accessible in the free version the same way as in the Pro. Just understand that using this feature in the free version will put a watermark on the document so use a copy if you are experimenting with this.

Just open the Viewer, turn on the Pages Thumbnails Toolbar (default Ctrl + T), then select the page(s) you do not want and press the delete key.
Or use the main menu command "Document -> Delete Pages..."
