How can I can copy text (paragraphes) from a loaded pdf doc?
I found no suitable menu for this.
Competitor tool Foxit Pdf Viewer offers in such a case a "Text Viewer" mode where I can mark and copy
text form the currently active page.
Where is an analogue function in PDF-XChange Viewer?

Use the select tool, or right-click to Select All, then copy.
